"Nothing to say but Mmmmm" vegan alfredo

UPDATE: 3/17/2011 I have de-spiced this a bit and gave directions for a smaller serving of sauce. It seems I like my food spicier than most! ;)

I've tried many vegan alfredo recipes I found online or in cookbooks and I never made one that i liked so much i made it twice. Always looking for something better.

Tonight I messed around and created my own. My bf took one bite and he made.... The "O" face. Ha! He named this recipe when he said, "Nothing to say but Mmmm...".

EDITED TO ADD: You will have LOTS of sauce left over, you can easily cut the sauce ingredients in half. Oops.

What you need:

Directions:
  • I made the alfredo sauce while the gluten free (bionatura is my fave brand), pasta cooked. 
  •  I put 1 pack of mori nu lite silken tofu into the ninja ( my food processor above ), and slowly added the non dairy milk until it was a texture and creaminess that i wanted. About .5 cup ( ish ). This is of course preference, it will thicken when heated.
  • Then added the:
  • 1 tsp garlic salt (maybe more to taste? or use garlic powder and less salt)
  • 1 tbls melted earth balance vegan butter
  • 1/2 tsp black pepper
  • 1/2 tsp crushed red pepper
  • 1/4 tsp chili powder
  • 1/2 tbls basil
  • 4 oz pasta (I use gf)
  • 1/4 cup daiya (if you have it, if not it doesn't suffer)
  •  blended more. 
  • I poured the alfredo over the pasta. While on low heat I added .5 cup of daiya vegan soy free ( very melty! ) cheese and stired until it was all combined. This dish does not require daiya, like most recipes, it's just extra good with it. :)

It. Was. Amazing. Definitely more flavor than any dairy based alfredo I've ever had!

  2. THIS IS IN THE TOP 5 THINGS I HAVE EATEN SINCE I WENT VEGAN (not that long ago, but I've STILL eaten a lot of things... haha.)

    Seriously, everyone should make this. And throw in a cup or so of chopped fresh spinach if you like. I did. You will be amazed!

  7. Ha, thanks! Yeah...I like things pretty spicy and peppery and such, so it's an issue when I cook for other people. Will keep it in mind for next recipe!

  8. What a fantastic idea! And I have silken tofu in the fridge right now too, hmmm. I can't have milk so I am going to sub chicken broth, and maybe add a little Parmesan and less spice. No pasta here either but I can have this over spaghetti squash or zucchini strips (steamed). Thank you!
