Protein Sources

So I've been struggling with trying to figure out just what to write about the last day or so and even as I struggled I've been talking to my boyfriend, Joey, about his eating habits. I had stopped cooking him dinner because I was eating earlier and he works late, so he would eat at work (he's a cook) and then have cereal before bed. He's been VERY cranky lately. Sleeping poorly, feeling very run down and constant headaches. This sounded familiar to me from my first month vegan, (he's vegetarian) Then I asked him what he's been eating. In his answer (fruit and salads) there was very little mention of protein. Like a lot of new veggies, he's neglecting the need for protein. His daily requirement (weight x's 0.36) is about 71 grams. Although he's vegetarian he doesn't eat eggs or much dairy. We both use daiya and the only dairy he currently eats is sour cream, but he's going to try a vegan one soon. There are plenty of protein sources out ...

When your schedule is insane and staying on plan is difficult: Reboot

So the last week or two life has gotten pretty hectic. I've had work, job interviews, birthday celebrations and tons of doc appointments all over the place. I've been buying a bus pass because I've been running around so much. All of this of course makes it difficult to eat at home and eat healthy. I've been staying within my cals except for two days where I had two pieces of fruit extra. But I hate WHAT I'm eating and HOW I'm eating. The "what": I've been eating fried stuff. Fried tofu here and there, one day I had fries. I don't even finish my plate, but I still feel less than stellar after eating that crap. It makes me kind of mad that when you don't eat meat the only other options for you are unhealthy deep fried stuff. I feel awful buying a taco salad when I could just as well make one at home and they are 10$ when I go to this vegan friendly place up the street. I need to remember that it's not a waste if it's saving me calo...

Quick and easy scrambled tofu taco recipe

~*~*~I'm gluten free and vegan~*~*~ As are all my recipes Almost all of my recipes serve 2, many with enough for leftovers This one easily serves two but I was REALLY hungry! So, when I woke up I was starving, had eaten an early dinner so by the time morning rolled around I was so hungry I felt nauseous. So, I needed something quick, and high protein, because if you read  yesterday's blog  you'll see I thought I was feeling mentally weak because I could not keep food off my mind. Thanks to  ~Darla~  I realized it was not mental weakness, it was physical. While my carb intake was as usual, even with the bread I had, my protein and fiber were both very low. Fiber was half what it normally is, and protein was less than a third what it normally is! So, on days when I wake up needing protein I have scrambled tofu. Today I was craving some spice, and crunch, so I decided on scrambled tofu tacos: This was so quick and easy I didn't even write it on the drawing boa...
