Kickin' back at kickback's.

So, as I've mentioned, I live in Pittsburgh, PA. We have a pinball arcade place here called Kickback pinball cafe. We've been meaning to get down there and today we finally did!
 Luckily they had some food options that worked out for us. We both had a salad. mixed greens, nuts, seeds, goat cheese and a light truffle kind of dressing, it was so good!
 We also had kale chips. That inspired me to come home and bust out the dehydrator and make kale chips of my own! I have made them before but they were kind of a failure. The first batch was too salty, the second batch had no flavor. This time I looked up a recipe for a cashew based vegan 'cheese' sauce, so as I type this they are dehydrating!

This is a pic of our fridge after we got all of our veggies. Some things you see in there are green juices, almond milk, and all that green stuff on the top shelf of the fridge is Tupperware full of chopped veggies to make tossing them in a salad or munching on them throughout the day easier. (Try it out, it helps!) The freezer is full of mostly frozen fruit.



Don't want to forget the fruit! A few avocados in there too. We also have a bunch of apples in our potato box because they're a great base for juicing greens, as well as pineapple! Pineapple Kale juice is a fave!



This was the start of dinner tonight.  I drizzled a bit of olive oil over these veggies, seasoned them like I would taco meat, and roasted them.

Then when they were done I put them in a tortilla shell and grilled it, melting a bit of cheese inside with it, along with some fresh sliced avocado and salsa. It came out so tasty :D


I also had ANOTHER salad with dinner, spinach and arugula, seeds, cucumbers, carrots, and a light tomato basil flavored dressing. For breakfast I had two eggs, grapes, raspberries, blackberries, an orange and a cup of almond milk. Tonight we will have a fruit smoothie to get the last bit of the days fruit in. Mentally, I already feel better!

I looked at this blog for the first time in two years the other day. I wanted to reference a post in another piece of writing. I had completely forgotten that I had revamped this site, and I like its look now. I do honestly miss writing here. So, I might try and liven the joint up a bit. Check back soon! Where am I now?
