...and I'm back

Well, the ticker is finally moving in a downward trend and staying there. I've lost 3 lbs this week. I've been eating 1500 cals, doing 30 mins on the bike a night (would like to do 30 in the morning too. will do that tomorrow) and drinking water, green tea, and fresh juice. at the moment I'm drinking some pineapple, kale and spinach juice. It was so overwhelmingly sweet that after two stems of kale I added about 2 or 3 handfulls of spinach and it's perfect. Mmmmm. :) Trying to get more dark leafy greens in.

So last year for me, was about weight loss. Now that I think I understand the whole weight loss process (whether I follow it all the time is another story altogether) I think this year the focus is going to be on whole foods and health. I do eat vegan (except recently I did slip up and have dairy a few times when eating out, but not since being back on plan.) and I do generally eat whole foods. BUT....not enough. I feel like more veggies could work their way into my diet.

I'm going to start juicing more often to get that fruit and veggie boost, and basing my meals on veggies and having grains and such as a much smaller portion.

Also I've started eating quinoa. It's just been sitting in the cupboard. The other day I made a beautiful quinoa, cherry, pineapple, chopped pecan stuffed acorn squash with roasted red potatoes tossed in garlic salt and truffle oil. SO GOOD. :) Give it a try!

    I haven't really started with quinoa, I'm on a brown rice kick. I use my rice cooker for easy meals ~ put in two cups of brown rice and add the right amount of water, then when it's about 12 minutes from being done, I add cubed tofu with whatever veggies I feel like putting in. I pretty much always have leeks, but I've done artichoke hearts, cherry tomatoes, summer squash, etc. Squirt in some Bragg's aminos and the rice cooker makes it super easy. I'm a Sriracha addict, so I usually have that in the mix once it's plated. :)

    renee: Sounds good! I have a rice cooker too, I should try that. I do cook my quinoa in it too though.

I looked at this blog for the first time in two years the other day. I wanted to reference a post in another piece of writing. I had completely forgotten that I had revamped this site, and I like its look now. I do honestly miss writing here. So, I might try and liven the joint up a bit. Check back soon! Where am I now?
